History

Despite assertions to the contrary on the Session, and the obvious similarity of the names, this tune is not the same as 'Cook in the Kitchen' and '(the) Northside Kitchen' (except for the very first phrase, and a portion of the last phrase in the A part). Also, it only has 2 parts, not 3. This is actually a tune from Kelly Russell's collection of Newfoundland Fiddle tunes, volume 1, and was collected from Rufus Guinchard. Our version is a little less complicated, dropping the 9/8 meter changes and adapting to accommodate.

On 'The Cook in the Kitchen', Per TFC; Irish, Double Jig. G Major (Harker/Rafferty): G Major/Mixolydian (most versions). Standard tuning. AABBCC (Harker/Rafferty, O'Neill, Russell): AA'BB'CC' (Mitchell, O'Malley). The 'F' natural note in the second measure is a characteristic of many versions of this tune. A Cape Breton jig titled "Northside Kitchen" shares a closely related 'A' part. Bread and Butter

Another bread & butter tune, the F naturals in the first part give this tune a lift. A good jig to pair with tunes like "Petticoat Loose" or "High Part of the Road" This tune is also good to practice your Flats on flute whistle if you don't have them down yet.

I've heard this one played with the first F in bars 2 and 6 played as an F# - probably arising from pipers, and flute players with keyless flutes being unable to half-hole quick enough to get in the Fnatural. It goes nicely before Tatter Jack Walsh. # Posted by CreadurMawnOrganig 13 years ago.

I like to play this tune followed by Seamus Cooleys and then Jim Wards jigs. I'm guilty of playing those F#'s after a year of hit or miss with the F naturals. Someday when I have a keyed flute, that will change : ) Joyce # Posted by JMH 13 years ago.

An alternate version

Here's a version I got from Ayelet Hacohen in Israel. She says that Amir, a guitar and mandoline player, transcribed it following a Dubliners interpretation. I like this version (which is not a plain transposition of the standard one in G - and does not have any difficult flute/whistle fingerings!) and find that it sits nicely after "Dusty Windowsills" in Ador.

O'Neill's Version

I just noticed that in O'Neill's Music Of Ireland Tune 1042, the F's are all sharps - no naturals at all. Anybody know anything abut when they came in? Or did he get it wrong? # Posted by e 10 years ago.

It seems that the 'rip-off' of this chimera jig, which I recognize as a collision between two jigs, but haven't managed to find the B-part yet, is an exact copy, including variations, of a transcription by Paul Cranford as given here ~

I've been playing this tune since I learnt it in the Fifties, and it was only yesterday that I discovered the F was usually played as a F Natural. Proves that you never stop learning this music. # Posted by Free Reed 7 years ago.
